Cranberry White Cheddar Cheese Ball

Whenever there is mention of a party or social gathering in my parts here in Southwest Virginia, you can about bet your bacon you'll hear someone say "I'll bring a cheese ball." 

It's a party whenever there's a cheese ball under a glass dome and surrounded by Ritz crackers, even if it's only your household of two or three. 

Sometimes there are Sociables or other cracker selections for fancy affairs or very special occasions.

During the month of December it's always acceptable to have Cranberry White Cheddar Cheese Ball for supper. It's an unwritten rule I'm sure, or it was in my home this year as I made this tart, tangy, savory snack and found myself calling it supper on several December evenings this year.

Even if you think you don't like cranberries, try this recipe as it became a hit with many of my anti-cranberry friends and family members.

You'll need:
1 8oz. bar of Cream Cheese softened. (Get the good stuff, Philadelphia Cream Cheese)
2 cups shredded White Cheddar Cheese (If grating place block in freezer a few minutes prior.)
1 cup Craisins (The featured star of this here recipe.)
1/2 cup Green Onions (chopped)
1 cup Pecans(chopped or buy chips/pieces bagged)

Stir together the cream cheese and white cheddar cheese until evenly blended
Add Craisins and Green Onions and mix in
Empty onto plastic wrap and shape into a ball
Pour out Pecans and roll cheese ball around until covered
Wrap tightly in a new piece of plastic wrap
Refrigerate overnight
